Cake Cookies!

1 Regular Cake Mix
2 Eggs
1 Tsp. Baking powder
1/2 C oil
 Powdered Sugar
Mix together and roll into balls in the powdered sugar and bake for 8 to 10 min on 350.

Fried Empanadas with Beef and Spices!! :)

1 TBS vinegar
1 1/2 LBS ground beef
1 onion (chopped)
2 TBSP olive oil
1 1/4 C water
1/2 C shortening
1 1/2 TSP salt
4 1/2 C flour
1 TBSP cumin
1/2 TBSP oregano
1/2 C raisins
2 TBSP paprika
1 TSP pepper
1/2 TSP hot chili powder
1 Q oil for frying
First I stirred the salt and flour together. Then I cut in the shortening until I had coarse crumbs. Then I added the water with a fork a little at a time, and mixed until I had a ball of dough. Then pat it in the middle and slightly flatten it. Then put it in the fridge with plastic wrap over it for an hour.
Then heat the olive oil over medium heat them add the onion and fry until tender.
Then crumble the ground beef and add seasonings until cooked and beef is browned.
Drain oil and add raisins and vinegar.
Refrigerate until cold.
Form dough into 2 inch balls and roll out until flattened on floured surface.
Divide meat into 24 dough circles and fold in half moon shapes pinching the edges to keep the meat in.
Deep fry in oil until browned! and WA LA!!!!

Chicken Gnocchi Soup!! :)

Hello again lovely internet people!
Today's focus is going to be on Chicken Gnocchi Soup! Just like the one from Olive Garden!


1 TBSP olive oil
4 TBSP butter
4 TBSP flour
1 Q half and half
1/2 C celery (Diced)
1 C onion (Diced)
2 minced garlic cloves
1 C onion (diced)
2 14 OZ cans of chicken broth (for thick soup use 1)
1 C carrots (chopped)
1 C chicken breast (chopped)(cooked... you can use rotisserie chicken)
1 package gnocchi 
1 C fresh spinach (coarsely chopped)
1/2 TSP salt
1/2 TSP thyme
1/2 TSP parsley
1/4 TSP nutmeg (optional)




Add onion celery and garlic in butter and olive oil and cook until onion becomes translucent.
Add flour and make roux.
let cook for about a minuet
ad half and half
cook gnocchi according to package
then add carrots and chicken to roux 
stir until thick then add chicken broth
once everything is thick add gnocchi spinach and seasoning and simmer until completely heated
I paired it with the biscuits  from my other recipe!

Carrot Cake!! :)

HEEEYYYY internet people!
Today I am going to be talking about a dessert instead of a meal. I am going to be talking about carrot cake! I have a version for allergy conscience people and a version that is not.
Here is the non health conscience people~
2 C flour
1 1/2 C sugar
1 1/2 C oil
2 TSP baking soda
2 TSP baking powder
2 TSP cinnamon
1 TSP salt
3 C grated carrots
4 eggs (room temp)
 Next I mixed the Oil, Sugar and eggs one at a time until creamy.
 Then add dry ingredients and mix well. Then add carrots.
Next grease 3 round 8" or 9" pans and bake @ 300 for 45 minutes.
Health conscience time yeah!!!!
2 C Mina's Purely Divine All Purpose Baking Mix
2 TSP baking soda
2 TSP cinnimon
1 TSP salt
2 C sugar
1 C oil
6 large eggs (or 1/2 C apple sauce 1 TBSP flax and 3 TBSP and 3/4 C milk... i used coconut milk)
2 C grated carrots


Same as far as directions go..except bake at 350 for 45 to 50 minutes or 60 if you're cooking in a 9"x13".


FROSTING::::...
2 8oz pkg cream cheese
2 boxes or 7 1/2 C powdered sugar
4 tsp vanilla
1 stick of butter

Parmesan Chicken!! :)

Hey fellow bloggers! Today's post is of my favorite dish EVER! Its called Parmesan Chicken.
1 C. Mayonayse
1/4 C. Parmesan Cheese
4 Chicken Breasts
4 TBS. Italian Seasoned Bread Crumbs

 First I laid the chicken breasts out in a 9x13'' pan and salted them lightly.
 Then I mixed the Parmesan cheese and the mayo and spread it on each chicken breast.
Then I made bread crumbs out of Milk and Honey bread (any bread will work fine) and added italian seasoning to them and put them on top of the Mayo mixture.

Baked @ 425 for 20 Minutes


 For the allergy conscience version instead of Milk and Honey bread I used home made bread that is Gluten,Dairy, Egg, and Corn free.And Vegenaise.


 I also made Red Lobster's Cheddar Biscuits.
2 C. Flour
2 TSP. baking powder
1/4 TSP garlic salt
6 TBSP cold butter in small cubes
1 C cheddar cheese
3/4 C buttermilk
TOPPING
3 TBSP melted butter
1/2 TSP dried parsley



 Put Dry Ingredients in a bowl. Then cut butter into dry ingredients add cheese and buttermilk combine but do not over stir.
Bake @ 400 for 14-16 minutes then melt butter with parsley and garlic salt and brush over biscuits. Unfortunately they were not allergy safe but they were VERY good!
I also made oven baked potatoes
I cut them in half put some salt on them and baked them until golden brown
Here are all 3 things in the finished products...

Blue Bayou Monte Cristo!!! :)

Hey everyone!
Today for dinner I made Monte Cristo's from the Blue Bayou in Disneyland. They were AMAZING! My whole family loved them! They were so easy!

First I mixed 1 3/4 c. Flour
1/4 tsp salt
1 tsp. baking powder
This formed a batter which was thick after a little while of stirring.
Then I formed the sandwich. I put ham, turkey and Swiss cheese on a piece of bread with another piece for the top.


Then I heated up the oil in a large pan.

Next i dipped each sandwich in the batter (after cutting it into quarters) and let it deep fry.
Then I put powdered sugar on top and ate it with Blackberry Jelly! :)

Chicken Scampi!!! :)

Hello fellow bloggers!
Today I will be reviewing my take on Olive Gardens Chicken Scampi.
The original recipe is...
3 tbs. Butter
2 tbs. Chopped Onion
1/4 c Minced Garlic
1 1/2 c. Chablis Wine
1/2 tbs. Salt
1/2 tsp. Italian Seasoning
1/2 tsp. Pepper
2 tsp. Parsley
1 c. Heavy Cream
Water
16 ounces Angel Hair Pasta
4 tbs. Olive Oil
12 Chicken Tenderloins
1/2 c. Flour
1 green,1 red, and 1 yellow bell pepper (bite sized)


Here's what the ingredients that I used looks like.

Now Here are the substitutions I made to make the meal Gluten, Dairy, Corn, and Egg free.
Instead of Angel Hair Pasta I used Organic Brown Rice Penne Pasta, and Coconut Milk and a small amount of rice flour (for thickening) instead of Heavy Cream.

Also instead of butter for both versions i put Olive Oil in the pan instead so I would not have to do anything different. You can use which ever you would like.

First I cooked the chicken which I covered in white rice flower before putting in the pan. I cooked it until golden brown.
Here's what it looked like.
When it was done cooking, I put it on a plate and cooked the peppers and onions in the same pan. Once they were slightly cooked I added the cream/coconut milk with rice flour,garlic, salt, Italian seasoning and parsley. We let that simmer for a while on medium heat For the health conscience version I added Sun Dried Tomatoes to help add flavor.

While that was cooking we cooked our Angel Hair Pasta. (I am not going to insult your intelligence by telling you how to cook pasta.)



Then we strained the pasta and added it to the sauce and put the chicken tenderloins on top! :)
