I have prepared a dish called Mexicali Express. It was fairly easy to make and did not require much prep time. It only took about 1 hour to make counting cook time.Here are what the ingredients for the original recipe looks like.
2 Cups Minute rice
1 Cup Salsa
1 Can Corn and slightly drain the water
1 Cup Mayonnaise
6 Chicken Tenders
1 cup shredded cheese
2 or 3 snack packs of Frito's or as much as desired
Basically all you have to do is cook the chicken and in a different pan pix all the other ingredients together with the cheese and Frito's on top and cook for 30 Minuets and then your done. I would also shred the chicken and mix it into the other ingredients before cooking.
Here are the ingredients for the Corn, Dairy, Gluten, and Egg free version of this meal
1 Cup Salsa
2 cups Vegenaise
With the crackers you desire on top depending on your allergy!
